
Barracouta
Barracouta (Thyrsites atun), also widely known as snoek in South Africa, is a predatory pelagic fish of the Gempylidae family distributed through the temperate Southern Hemisphere . It occurs in coastal and offshore waters of the Southwest Pacific, South Atlantic, and southern Indian Ocean , and has long supported commercial fisheries in New Zealand and South Africa. Commercially, it is not a luxury fish, but it holds a firm place as a recognizable regional species with strong traditional demand and dependable industrial use.
Barracouta is marketed mainly for human consumption in fresh, frozen, HG, fillet, salted, and smoked forms. Its flesh is darker when raw but whitens on cooking, with a firm texture, medium moisture, and low fat content , making it suitable for grilling, frying, smoking, and further processing. In South Africa, snoek has strong traditional culinary status, while New Zealand product lines include both frozen HGT and fillet formats.
By commercial volume, New Zealand remains the core industrial barracouta fishery, with catches historically far exceeding those of other supplying countries, while South Africa remains the other major market-facing fishery and cultural reference point for the species. Australia also lands barracouta, but on a clearly smaller commercial scale.
