Bonito tuna
Atlantic bonito (Sarda sarda), also known in trade as bonito tuna, is a highly valued small tuna species of the Scombridae family, naturally distributed across the Atlantic Ocean, the Mediterranean Sea, and the Black Sea. It is an epipelagic, neritic, schooling fish, typically associated with productive coastal and offshore waters rather than the deep tropical tuna grounds. Commercially, Atlantic bonito occupies an attractive middle position between small mackerel-type pelagics and larger tuna species. Its strong market identity is especially evident in Mediterranean trade, where seasonal availability, recognizable species character, and established culinary demand give it a stable commercial role.
Atlantic bonito is used mainly for human consumption and is marketed in a wide range of forms, including fresh, frozen, salted, and canned products. Its commercial strength lies in its dark, flavorful flesh, low oil content, and firm texture, which make it highly suitable for steaks, loins, canned products, and traditional Mediterranean preparations. Compared with lighter pelagic species, bonito offers a more pronounced taste profile and a stronger culinary identity, which helps it maintain value in both fresh fish counters and further-processed segments.
The main commercial fisheries for Atlantic bonito are concentrated in the Mediterranean, the eastern Atlantic, and parts of the Black Sea, where the species has its greatest economic relevance. Most important fishing and trading countries include Morocco, Algeria, Spain, Turkiye, Tunisia, and Italy, while additional regional significance remains in Black Sea fisheries and selected western Atlantic landings.
