
King salmon
Chinook is the largest Pacific salmon, which is exactly why it is called the king salmon. It is native to the North Pacific and river systems from California to Alaska, with additional distribution in the western North Pacific in Asia. Juveniles grow in freshwater and estuaries before moving to sea, and returning adults migrate back on distinct seasonal runs - spring fish move inland from April to July, summer fish from June to August, fall fish from late July to December, and winter fish from December to May.
Commercially, king salmon is the premium wild Pacific salmon, prized for its high oil content, firm texture, and succulent flesh. It is marketed fresh and frozen as whole gutted fish, HG, portions, fillets, salted, and smoked products, with strong positioning in premium retail and foodservice.
The main wild-capture suppliers are the United States, especially Alaska, and Canada, while Russia and Japan also report Chinook catches within the North Pacific salmon harvesting system.
