Chilean mussels (Mytilus chilensis), widely known in trade as choritos, are the main cultivated mussel species of southern Chile and one of the most important farmed bivalves in the Southern Hemisphere. Production is concentrated in the Los Lagos region, especially around Chiloé and the inland waters of southern Chile, where cool, plankton-rich conditions support large-scale longline farming. Commercially, Chilean mussels are one of the clearest examples of how a regional shellfish can evolve into an export-driven global product.
From a product perspective, Chilean mussels are valued for their uniform shell size, good meat recovery, mild flavor, and strong suitability for industrial processing. They are marketed mainly in IQF meat, half-shell, whole-shell, cooked, and frozen retail or foodservice formats, with most output geared toward export. Compared with more locally consumed mussel categories, Chilean mussels have a much more industrial and international profile, serving processors, private label buyers, and prepared-food channels across multiple markets.
By commercial weight, Chile is the dominant producing country for this species and one of the world’s major mussel exporters overall. In market terms, Chilean mussels are best positioned as a high-volume export mussel, valued for processing efficiency, competitive cost structure, and dependable large-scale supply rather than for a luxury image.
